At Le Taillant, sharpening a kitchen knife (chef's, santoku, paring…) costs €7.50, and €5 for a table knife. The price is identical at the Auderghem workshop and by post from anywhere in Belgium. A full blade-geometry honing starts at €25.
Why does the price vary by knife?
A kitchen knife has a longer blade and sees heavier use than a table knife: the inspection, whetstone sharpening, deburring, and edge check all take more time. The price reflects that work, not the brand or exact size of the knife.

- Kitchen knife — €7.50 (chef's, santoku, paring, wide-serrated bread knife)
- Table knife — €5 (steak knives, smooth-bladed knives)
- Honing (blade geometry) — €25 to €35 depending on type and condition
- Professional rate — €5.50 per kitchen knife, €4 per table knife, + €10 round fee

Does the price change based on the blade's condition?
Significant damage (a deep chip, a broken tip) may need more work than a standard sharpening — in that case, we contact you before starting to confirm any extra charge. No surprises when you pick the knife up.
Do you pay more for a Japanese knife?
A standard sharpening stays at the usual rate. It's honing — a deeper correction of the blade's geometry, suited to Japanese blades and premium knives sharpened many times over — that carries its own rate, from €25. See the difference between sharpening and honing.
